  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 4 cups cooked rice (white or brown)
  • 2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
  • Sesame seeds and green onions for garnish

Instructions

  • Cut the chicken into bite-sized pieces.
  • In a large skillet, heat a tablespoon of oil over medium-high heat. Add the chicken and cook until golden brown, about 5-7 minutes.
  • Whisk together honey, soy sauce, minced garlic, rice vinegar, cornstarch, and water in a small bowl.
  • Pour the honey garlic sauce over the cooked chicken in the skillet. Stir well to combine and let simmer for about 5 minutes until thickened.
  • Add the mixed vegetables to the skillet and cook for an additional 3-4 minutes until tender-crisp.
  • Serve the honey garlic chicken over cooked rice. Garnish with sesame seeds and chopped green onions.
