- 1 pound boneless, skinless chicken thighs or breasts
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water
- 4 cups cooked rice (white or brown)
- 2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
- Sesame seeds and green onions for garnish
Instructions
- Cut the chicken into bite-sized pieces.
- In a large skillet, heat a tablespoon of oil over medium-high heat. Add the chicken and cook until golden brown, about 5-7 minutes.
- Whisk together honey, soy sauce, minced garlic, rice vinegar, cornstarch, and water in a small bowl.
- Pour the honey garlic sauce over the cooked chicken in the skillet. Stir well to combine and let simmer for about 5 minutes until thickened.
- Add the mixed vegetables to the skillet and cook for an additional 3-4 minutes until tender-crisp.
- Serve the honey garlic chicken over cooked rice. Garnish with sesame seeds and chopped green onions.
