- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1 large egg
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar, packed
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set it aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the honey, vanilla extract, and egg, mixing until combined.
- Gradually add the flour mixture to the wet ingredients, stirring until just combined.
- In a small bowl, mix the ground cinnamon and brown sugar together.
- Take about a tablespoon of cookie dough and flatten it in your palm. Sprinkle a pinch of the cinnamon-sugar mixture inside and fold the dough over, sealing it.
- Roll it into a ball and place it on the prepared baking sheet.
- Repeat until all dough is used, leaving some space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
