  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar, packed

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set it aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add in the honey, vanilla extract, and egg, mixing until combined.
  • Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  • In a small bowl, mix the ground cinnamon and brown sugar together.
  • Take about a tablespoon of cookie dough and flatten it in your palm. Sprinkle a pinch of the cinnamon-sugar mixture inside and fold the dough over, sealing it.
  • Roll it into a ball and place it on the prepared baking sheet.
  • Repeat until all dough is used, leaving some space between each cookie.
  • Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
