A simple and flavorful dish combining salmon, honey, and Cajun spices on a bed of rice.

  • 2 fillets salmon
  • 2 tablespoons honey
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 cups cooked rice
  • 1 cup chicken broth
  • 1 cup bell pepper, diced
  • 1 small onion, diced
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions

  • Cook the rice according to package instructions and set aside.
  • Heat olive oil in a large skillet over medium heat, add diced onion and bell pepper, sauté for 3-4 minutes.
  • Season salmon fillets with Cajun seasoning, salt, and pepper.
  • Push veggies to the side and add salmon, cooking skin-side down for about 5 minutes.
  • Drizzle honey over salmon, flip, and cook for an additional 3-4 minutes.
  • Pour chicken broth into the skillet and bring to a simmer.
  • Stir in the cooked rice and heat through for 2-3 minutes.
  • Serve hot and garnish with fresh parsley if desired.
