- 2 fillets salmon
- 2 tablespoons honey
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 2 cups cooked rice
- 1 cup chicken broth
- 1 cup bell pepper, diced
- 1 small onion, diced
- to taste salt and pepper
- for garnish fresh parsley
Instructions
- Cook the rice according to package instructions and set aside.
- Heat olive oil in a large skillet over medium heat, add diced onion and bell pepper, sauté for 3-4 minutes.
- Season salmon fillets with Cajun seasoning, salt, and pepper.
- Push veggies to the side and add salmon, cooking skin-side down for about 5 minutes.
- Drizzle honey over salmon, flip, and cook for an additional 3-4 minutes.
- Pour chicken broth into the skillet and bring to a simmer.
- Stir in the cooked rice and heat through for 2-3 minutes.
- Serve hot and garnish with fresh parsley if desired.
