- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil or melted butter
- 2 large eggs
- 1/4 cup honey
- 1/4 cup butter, softened (for honey butter)
- 1/4 cup honey (for honey butter)
Instructions
- Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper liners.
- In a mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt. Mix well.
- In another bowl, whisk together the milk, oil, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients. Stir until just combined.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 12-15 minutes or until a toothpick inserted comes out clean.
- While the poppers bake, mix softened butter and honey in a small bowl for the honey butter.
- Once baked, remove from the oven and let cool slightly before drizzling with honey butter.
