  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil or melted butter
  • 2 large eggs
  • 1/4 cup honey
  • 1/4 cup butter, softened (for honey butter)
  • 1/4 cup honey (for honey butter)

Instructions

  • Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper liners.
  • In a mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt. Mix well.
  • In another bowl, whisk together the milk, oil, and eggs until smooth.
  • Pour the wet ingredients into the dry ingredients. Stir until just combined.
  • Fill each muffin cup about 2/3 full with batter.
  • Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  • While the poppers bake, mix softened butter and honey in a small bowl for the honey butter.
  • Once baked, remove from the oven and let cool slightly before drizzling with honey butter.
