  • 1 pound ground beef
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (8 oz) corn, drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 3 cups frozen tater tots
  • 1 cup shredded cheese (cheddar or your choice)

Instructions

  1. Brown the ground beef in a skillet over medium heat for 5-7 minutes, then drain excess fat.
  2. Add diced onion and minced garlic, sauté until onions are translucent (3-4 minutes).
  3. Mix in diced tomatoes, kidney beans, corn, chili powder, and cumin; simmer for 5 minutes.
  4. Transfer the mixture to a greased 9×13-inch baking dish and layer frozen tater tots on top.
  5. Preheat oven to 400°F (200°C) and bake for 25 minutes. Sprinkle cheese on top and bake for an additional 5-10 minutes until melted.
