- 2 cups shredded zucchini
- 1 ½ cups whole wheat flour
- ½ cup brown sugar
- ¼ cup honey
- ½ cup unsweetened applesauce
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ cup chopped walnuts or pecans (optional)
- ¼ cup raisins or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, combine the shredded zucchini, brown sugar, honey, applesauce, eggs, and vanilla extract. Mix until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- If you’re adding nuts, raisins, or chocolate chips, fold them in now.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
