- 1 pound shrimp (peeled and deveined)
- 2 ripe avocados (diced)
- 1 cup mango (diced (fresh or frozen))
- 1/2 cup red onion (finely chopped)
- 1 cup bell pepper (diced (any color))
- 1 lime lime (juiced)

- 1 tablespoon olive oil
- for garnish fresh cilantro (optional)
Instructions
- Start by marinating the shrimp in lime juice, olive oil, salt, and pepper. Let it sit for about 15 minutes to absorb the flavors.
- While the shrimp marinates, prepare the mango salsa. In a bowl, combine diced mango, red onion, bell pepper, and the juice of half a lime. Stir well and set aside.
- Heat a skillet over medium heat and add a splash of olive oil. Cook the shrimp for about 2-3 minutes on each side until they’re pink and opaque.
- To assemble the bowls, place a generous scoop of diced avocado in each bowl, followed by the cooked shrimp and a spoonful of mango salsa.
- Garnish with fresh cilantro if desired. Serve immediately and enjoy the vibrant flavors!
