- 1 lb lean chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 1 cup brown rice, cooked
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- to taste salt and pepper
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced chicken and cook until browned, about 5-7 minutes.
- Stir in the mixed vegetables and sauté for another 5 minutes.
- Add the minced garlic and cook for an additional minute.
- Mix in the cooked brown rice and soy sauce, stirring until heated through.
- Season with salt and pepper to taste, then serve hot.
