- 6 cups Rice Krispies cereal
- 1 cup mini marshmallows
- 1/2 cup shredded coconut
- 1/4 cup butter
- 1/2 cup crushed pineapple (drained)
- 1/2 teaspoon vanilla extract
- optional extra coconut (for topping)
Instructions
- Melt the butter in a large saucepan over low heat. Stir in the marshmallows until melted.
- Add the vanilla extract and crushed pineapple, mixing well.
- Fold in the shredded coconut.
- Remove from heat and slowly add the Rice Krispies, stirring until well coated.
- Grease a 9×13 inch baking dish and press the mixture into the pan.
- Sprinkle more coconut on top if desired and let cool before cutting into squares.
