  • 1 cup pineapple chunks (Fresh or canned.)
  • 1/2 cup celery, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onions, sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper (to taste)
  • 1/4 cup slivered almonds or cashews (Optional for crunch.)

Instructions

  • Gather all your ingredients and chop the vegetables.
  • In a large mixing bowl, combine the shredded chicken, pineapple chunks, diced celery, diced red bell pepper, and sliced green onions.
  • In a separate small bowl, mix the mayonnaise and lemon juice until smooth. Season with salt and pepper to taste.
