- 2 cups cooked chicken, shredded (Use rotisserie chicken for a quick option.)
- 1 cup pineapple chunks (Fresh or canned.)
- 1/2 cup celery, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper (to taste)
- 1/4 cup slivered almonds or cashews (Optional for crunch.)
Instructions
- Gather all your ingredients and chop the vegetables.
- In a large mixing bowl, combine the shredded chicken, pineapple chunks, diced celery, diced red bell pepper, and sliced green onions.
- In a separate small bowl, mix the mayonnaise and lemon juice until smooth. Season with salt and pepper to taste.
- Pour the dressing over the chicken mixture and toss everything together gently until well combined.
- If desired, add slivered almonds or cashews for an extra crunch and toss again.
- Cover the salad and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled.
