- 1 pound boneless, skinless chicken thighs
- 1 cup Hawaiian BBQ sauce
- 2 cups cooked white rice
- 1 cup pineapple chunks
- 1/2 cup sliced green onions
- 1/2 cup shredded carrots
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Marinate the chicken thighs in Hawaiian BBQ sauce for at least 15 minutes.
- Heat olive oil in a large skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes per side, or until fully cooked.
- Prepare the rice according to package instructions.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- Assemble the bowls with rice, sliced chicken, pineapple, carrots, and green onions.
- Drizzle extra BBQ sauce and serve.
