- 1 pound ground beef
- 1 medium zucchini, diced
- 1 medium sweet potato, peeled and cubed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- to taste Salt and pepper
- 2 tablespoons olive oil
- for garnish Chopped fresh parsley (optional)
Instructions
- Start by heating the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for about 3 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
- Once the beef is browned, toss in the diced sweet potato. Stir everything together and cover the skillet. Cook for 10 minutes, stirring occasionally.
- Add the zucchini, paprika, cumin, salt, and pepper. Mix well and cover again. Cook for another 5-7 minutes until the zucchini is tender and the sweet potato is cooked through.
- Remove from heat and garnish with fresh parsley, if using. Serve warm!
