  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic (minced)
  • 1 tablespoon sesame oil
  • 1 pound boneless, skinless chicken breasts
  • 1 fresh pineapple (peeled and sliced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • In a bowl, mix soy sauce, brown sugar, ginger, garlic, and sesame oil. This will be your marinade.
  • Place chicken breasts in a resealable bag and pour in the marinade. Marinate in the fridge for at least 30 minutes.
  • Preheat your grill to medium-high heat. Brush pineapple slices with olive oil.
  • Remove chicken from marinade and grill for 6-7 minutes per side, until cooked through.
  • Grill pineapple slices for 3 minutes on each side, until caramelized.
  • Serve the chicken topped with grilled pineapple. Season with salt and pepper as needed.
