- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon grated fresh ginger
- 2 cloves garlic (minced)
- 1 tablespoon sesame oil
- 1 pound boneless, skinless chicken breasts
- 1 fresh pineapple (peeled and sliced)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix soy sauce, brown sugar, ginger, garlic, and sesame oil. This will be your marinade.
- Place chicken breasts in a resealable bag and pour in the marinade. Marinate in the fridge for at least 30 minutes.
- Preheat your grill to medium-high heat. Brush pineapple slices with olive oil.
- Remove chicken from marinade and grill for 6-7 minutes per side, until cooked through.
- Grill pineapple slices for 3 minutes on each side, until caramelized.
- Serve the chicken topped with grilled pineapple. Season with salt and pepper as needed.
