- 1 lb flank steak

- 1 teaspoon cumin

- 4 small corn tortillas
- 1 cup corn (fresh, grilled, or canned)
- 1/2 cup crumbled queso fresco
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder (for topping)
- to taste fresh cilantro (for garnish)
Instructions
- Start by marinating the flank steak. In a bowl, combine olive oil, chili powder, cumin, salt, and pepper. Coat the steak well and let it marinate for at least 15 minutes.
- While the steak is marinating, preheat your grill to medium-high heat.
- Once ready, grill the steak for about 5-7 minutes on each side or until it reaches your desired level of doneness.
- Remove the steak from the grill and let it rest for a few minutes.
- In a small bowl, mix together the mayonnaise, lime juice, and a pinch of salt.
- Slice the steak against the grain into thin strips.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble your tacos by placing a few slices of steak on each tortilla, followed by the corn, queso fresco, and drizzling the creamy topping over the top.
- Finish with a sprinkle of chili powder and fresh cilantro for garnish.
