  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste salt and pepper
  • 4 small corn tortillas
  • 1 cup corn (fresh, grilled, or canned)
  • 1/2 cup crumbled queso fresco
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder (for topping)
  • to taste fresh cilantro (for garnish)

Instructions

  • Start by marinating the flank steak. In a bowl, combine olive oil, chili powder, cumin, salt, and pepper. Coat the steak well and let it marinate for at least 15 minutes.
  • While the steak is marinating, preheat your grill to medium-high heat.
  • Once ready, grill the steak for about 5-7 minutes on each side or until it reaches your desired level of doneness.
  • Remove the steak from the grill and let it rest for a few minutes.
  • In a small bowl, mix together the mayonnaise, lime juice, and a pinch of salt.
  • Slice the steak against the grain into thin strips.
  • Warm the corn tortillas on the grill for about 30 seconds on each side.
  • Assemble your tacos by placing a few slices of steak on each tortilla, followed by the corn, queso fresco, and drizzling the creamy topping over the top.
  • Finish with a sprinkle of chili powder and fresh cilantro for garnish.
