  • 1 pound flank steak
  • 2 medium zucchinis (sliced)
  • 1 tablespoon olive oil
  • Salt and pepper (to taste)
  • 2 cups cooked rice (preferably jasmine or basmati)
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Instructions

  • Preheat your grill to medium-high heat. While waiting, season the steak with salt, pepper, garlic powder, and smoked paprika.
  • Brush the zucchini slices with olive oil, and sprinkle with salt and pepper.
  • Place the steak on the grill, cooking for about 6 minutes on each side for medium-rare. Adjust time for desired doneness.
  • Grill the zucchini for about 3 minutes on each side until they have nice grill marks.
  • Remove steak from the grill and let it rest for 5 minutes. Then slice it thinly against the grain.
  • In a bowl, combine cooked rice with soy sauce and lemon juice.
  • Assemble your bowl by layering rice, steak slices, and grilled zucchini. Serve immediately.
