- 1 pound flank steak
- 2 medium zucchinis (sliced)
- 1 tablespoon olive oil
- Salt and pepper (to taste)
- 2 cups cooked rice (preferably jasmine or basmati)
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Instructions
- Preheat your grill to medium-high heat. While waiting, season the steak with salt, pepper, garlic powder, and smoked paprika.
- Brush the zucchini slices with olive oil, and sprinkle with salt and pepper.
- Place the steak on the grill, cooking for about 6 minutes on each side for medium-rare. Adjust time for desired doneness.
- Grill the zucchini for about 3 minutes on each side until they have nice grill marks.
- Remove steak from the grill and let it rest for 5 minutes. Then slice it thinly against the grain.
- In a bowl, combine cooked rice with soy sauce and lemon juice.
- Assemble your bowl by layering rice, steak slices, and grilled zucchini. Serve immediately.
