A delicious and customizable grilled steak bowl featuring tender steak and perfectly grilled zucchini, served over rice or quinoa.

  • Total Time: 50

Ingredients

Scale
  • 1 pound flank steak
  • 2 medium zucchinis, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa (for serving)
  • Fresh herbs like parsley or cilantro, for garnish
  • Your favorite sauce (like teriyaki or BBQ), for drizzling

Instructions

  • Start by marinating the flank steak. In a bowl, combine olive oil, garlic powder, onion powder, salt, and pepper. Coat the steak with this mixture and let it marinate for at least 30 minutes.
  • While the steak marinates, preheat your grill to medium-high heat.
  • Slice the zucchinis into rounds and toss them with a little olive oil, salt, and pepper. Place them on the grill when it’s hot.
  • Grill the zucchinis for about 4-5 minutes on each side or until they’re tender and have nice grill marks. Remove them from the grill and set aside.
  • Next, grill the flank steak for 6-8 minutes on each side for medium-rare. Use a meat thermometer to check for doneness (130-135°F for medium-rare).
  • Once the steak is done, let it rest for about 5 minutes before slicing it against the grain into thin strips.
  • Assemble your steak bowl by adding a base of rice or quinoa, topping it with grilled zucchini and sliced steak. Drizzle your favorite sauce on top and garnish with fresh herbs.
