- 4 whole ripe peaches (halved and pitted)
- 6 cups fresh arugula or spinach
- 1/2 cup crumbled goat cheese
- 1/4 cup sliced almonds or walnuts
- 1/4 cup balsamic vinaigrette dressing
- Salt and pepper (to taste)
Instructions
- Preheat your grill to medium-high heat.
- Halve the peaches and remove the pits. Brush the cut sides lightly with olive oil.
- Place the peaches cut side down on the grill. Grill for about 4-5 minutes until they have grill marks.
- In a large bowl, combine the arugula, goat cheese, and nuts.
- Once the peaches are done, slice them into wedges and add them to the salad.
- Drizzle with balsamic vinaigrette and toss gently to combine.
- Season with salt and pepper to taste. Serve immediately!
