A refreshing salad featuring sweet grilled peaches, fresh greens, and creamy goat cheese, perfect for summer.

  • 4 whole ripe peaches (halved and pitted)
  • 6 cups fresh arugula or spinach
  • 1/2 cup crumbled goat cheese
  • 1/4 cup sliced almonds or walnuts
  • 1/4 cup balsamic vinaigrette dressing
  • Salt and pepper (to taste)

Instructions

  • Preheat your grill to medium-high heat.
  • Halve the peaches and remove the pits. Brush the cut sides lightly with olive oil.
  • Place the peaches cut side down on the grill. Grill for about 4-5 minutes until they have grill marks.
  • In a large bowl, combine the arugula, goat cheese, and nuts.
  • Once the peaches are done, slice them into wedges and add them to the salad.
  • Drizzle with balsamic vinaigrette and toss gently to combine.
  • Season with salt and pepper to taste. Serve immediately!
