  • 4 ripe peaches (halved and pitted)
  • 6 cups mixed greens (such as arugula or spinach)
  • 1 cup feta cheese (crumbled)
  • 1/2 cup walnuts (toasted)
  • 1/4 cup balsamic vinaigrette
  • 2 tablespoons olive oil
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  • Preheat your grill to medium heat.
  • Brush the cut sides of the peaches with olive oil and season with salt and pepper.
  • Place peaches cut-side down on the grill and grill for 3-4 minutes.
  • Remove peaches and let them cool before slicing into wedges.
  • In a large bowl, combine mixed greens, feta, and walnuts.
  • Add grilled peach wedges and drizzle with balsamic vinaigrette.
  • Toss gently to combine and serve immediately.
