- 4 ripe peaches (halved and pitted)
- 6 cups mixed greens (such as arugula or spinach)
- 1 cup feta cheese (crumbled)
- 1/2 cup walnuts (toasted)
- 1/4 cup balsamic vinaigrette
- 2 tablespoons olive oil
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat your grill to medium heat.
- Brush the cut sides of the peaches with olive oil and season with salt and pepper.
- Place peaches cut-side down on the grill and grill for 3-4 minutes.
- Remove peaches and let them cool before slicing into wedges.
- In a large bowl, combine mixed greens, feta, and walnuts.
- Add grilled peach wedges and drizzle with balsamic vinaigrette.
- Toss gently to combine and serve immediately.
