- 2 whole ripe peaches, halved and pitted
- 8 ounces fresh burrata cheese
- 4 cups arugula or mixed greens
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze
- Salt and pepper, to taste
- Optional: fresh basil or mint for garnish
Instructions
- Preheat your grill to medium heat. You can also use a grill pan if you’re indoors.
- Brush the peach halves with a little olive oil to prevent sticking.
- Place the peaches cut-side down on the grill. Grill for about 4-5 minutes until grill marks appear and they soften slightly.
- While the peaches are grilling, prepare the arugula or mixed greens in a large bowl.
- Once the peaches are done, remove them from the grill and let them cool for a minute.
- Arrange the greens on a serving plate or bowl. Top with the grilled peaches and tear the burrata into pieces over the top.
- Drizzle with olive oil and balsamic glaze. Season with salt and pepper to taste.
- Garnish with fresh basil or mint, if using. Serve immediately and enjoy!
