A refreshing summer salad featuring grilled peaches and creamy burrata on a bed of arugula.

  • 2 whole ripe peaches, halved and pitted
  • 8 ounces fresh burrata cheese
  • 4 cups arugula or mixed greens
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Salt and pepper, to taste
  • Optional: fresh basil or mint for garnish

Instructions

  • Preheat your grill to medium heat. You can also use a grill pan if you’re indoors.
  • Brush the peach halves with a little olive oil to prevent sticking.
  • Place the peaches cut-side down on the grill. Grill for about 4-5 minutes until grill marks appear and they soften slightly.
  • While the peaches are grilling, prepare the arugula or mixed greens in a large bowl.
  • Once the peaches are done, remove them from the grill and let them cool for a minute.
  • Arrange the greens on a serving plate or bowl. Top with the grilled peaches and tear the burrata into pieces over the top.
  • Drizzle with olive oil and balsamic glaze. Season with salt and pepper to taste.
  • Garnish with fresh basil or mint, if using. Serve immediately and enjoy!
