A refreshing summer salad featuring grilled peaches, creamy burrata, and mixed greens, drizzled with balsamic glaze.

  • 2 ripe peaches (halved and pitted)
  • 1 tablespoon olive oil
  • 4 cups mixed greens (arugula, spinach, or your choice)
  • 8 oz burrata cheese
  • 1/4 cup balsamic glaze
  • to taste Salt and pepper
  • for garnish Fresh basil leaves

Instructions

  • Preheat your grill to medium-high heat. If you’re using a grill pan, heat it on the stovetop.
  • Brush the peach halves with olive oil and sprinkle with a bit of salt and pepper.
  • Place the peaches cut-side down on the grill. Grill for about 4-5 minutes until you see nice grill marks.
  • Carefully flip the peaches and grill for another 2-3 minutes until tender. Remove from heat.
  • In a large bowl, combine the mixed greens and drizzle with balsamic glaze. Toss gently to coat.
  • Plate the greens and top with grilled peaches and torn pieces of burrata cheese.
  • Finish with a drizzle of additional balsamic glaze and garnish with fresh basil leaves.
  • Serve immediately and enjoy!
