- 2 ripe peaches (halved and pitted)
- 1 tablespoon olive oil
- 4 cups mixed greens (arugula, spinach, or your choice)
- 8 oz burrata cheese
- 1/4 cup balsamic glaze
- to taste Salt and pepper
- for garnish Fresh basil leaves
Instructions
- Preheat your grill to medium-high heat. If you’re using a grill pan, heat it on the stovetop.
- Brush the peach halves with olive oil and sprinkle with a bit of salt and pepper.
- Place the peaches cut-side down on the grill. Grill for about 4-5 minutes until you see nice grill marks.
- Carefully flip the peaches and grill for another 2-3 minutes until tender. Remove from heat.
- In a large bowl, combine the mixed greens and drizzle with balsamic glaze. Toss gently to coat.
- Plate the greens and top with grilled peaches and torn pieces of burrata cheese.
- Finish with a drizzle of additional balsamic glaze and garnish with fresh basil leaves.
- Serve immediately and enjoy!
