- 1 pound shrimp (peeled and deveined)
- 4 cloves garlic (minced)
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- Salt and pepper (to taste)
- 4 cups mixed salad greens ((like arugula, spinach, or romaine))
- 1 cup cherry tomatoes (halved)
- 1 avocado (sliced)
- 1/4 cup red onion (thinly sliced)
- Fresh cilantro (for garnish)
Instructions
- In a mixing bowl, combine the garlic, lime juice, olive oil, chili powder, salt, and pepper. Whisk until well combined.
- Add the shrimp to the marinade, making sure they are well-coated. Let them marinate for about 15-20 minutes.
- Preheat your grill to medium-high heat. If you don’t have a grill, you can use a grill pan on the stovetop.
- Once the grill is hot, place the shrimp on skewers (if using wooden skewers, soak them in water first to prevent burning) or directly on the grill.
- Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
- In a large bowl, toss the mixed greens, cherry tomatoes, avocado, and red onion. Top with the grilled shrimp.
- Garnish with fresh cilantro and serve immediately with extra lime wedges on the side.
