Grilled Garlic Lime Shrimp Salad

  • 1 pound shrimp (peeled and deveined)
  • 4 cloves garlic (minced)
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • Salt and pepper (to taste)
  • 4 cups mixed salad greens ((like arugula, spinach, or romaine))
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (sliced)
  • 1/4 cup red onion (thinly sliced)
  • Fresh cilantro (for garnish)

Instructions

  • In a mixing bowl, combine the garlic, lime juice, olive oil, chili powder, salt, and pepper. Whisk until well combined.
  • Add the shrimp to the marinade, making sure they are well-coated. Let them marinate for about 15-20 minutes.
  • Preheat your grill to medium-high heat. If you don’t have a grill, you can use a grill pan on the stovetop.
  • Once the grill is hot, place the shrimp on skewers (if using wooden skewers, soak them in water first to prevent burning) or directly on the grill.
  • Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
  • In a large bowl, toss the mixed greens, cherry tomatoes, avocado, and red onion. Top with the grilled shrimp.
  • Garnish with fresh cilantro and serve immediately with extra lime wedges on the side.
