- 2 cups cooked grilled chicken (sliced)
- 4 large tortillas (whole wheat or regular)
- 4 cups romaine lettuce (chopped)
- 1/2 cup Caesar dressing (store-bought or homemade)
- 1/2 cup grated Parmesan cheese
- 1/2 cup cherry tomatoes (halved (optional))
Instructions
- If you haven’t yet, grill your chicken. Season it with salt and pepper, and grill for about 6-7 minutes on each side, until it reaches an internal temperature of 165°F. Let it rest for a few minutes before slicing.
- In a large mixing bowl, combine the chopped romaine, sliced grilled chicken, and halved cherry tomatoes (if using). Add the Caesar dressing and toss gently until everything is evenly coated.
- Lay a tortilla flat on a clean surface. Place a generous portion of the salad mixture in the center of the tortilla. Sprinkle with grated Parmesan cheese.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas.
- Slice each wrap in half and serve immediately, or wrap in foil or parchment paper for an on-the-go meal.
