- 8 ounces pasta (rotini or penne)
- 1 cup Greek yogurt
- 1/2 cup ranch dressing
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1 cup cooked chicken (optional)
Instructions
- Start by cooking the pasta according to the package instructions. Make sure to add salt to the water for flavor. Once cooked, drain and rinse under cold water to cool it down.
- In a large mixing bowl, combine the Greek yogurt and ranch dressing. Stir until well mixed.
- Add the cooled pasta to the bowl, followed by the cherry tomatoes, cucumber, bell pepper, red onion, and parsley. Toss everything together until the pasta is well coated.
- Season with salt and pepper to taste. If you like a bit of kick, feel free to add some crushed red pepper flakes!
- Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes. This allows the flavors to meld together wonderfully.
- Before serving, give the salad a good stir. You can also add more dressing if you prefer it creamier.
