  • 1 package (9 ounces) of cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil salted water and cook the tortellini according to package instructions until they float, about 3-5 minutes.
  2. Chop the cherry tomatoes, cucumber, and red onion into uniform pieces.
  3. Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl for the dressing.
  4. Drain the tortellini and let cool, then combine with vegetables, olives, feta, and parsley in a large bowl.
  5. Pour the dressing over the salad, toss gently, and chill in the refrigerator for at least 30 minutes before serving.
