- 1 package (9 ounces) of cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Boil salted water and cook the tortellini according to package instructions until they float, about 3-5 minutes.
- Chop the cherry tomatoes, cucumber, and red onion into uniform pieces.
- Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl for the dressing.
- Drain the tortellini and let cool, then combine with vegetables, olives, feta, and parsley in a large bowl.
- Pour the dressing over the salad, toss gently, and chill in the refrigerator for at least 30 minutes before serving.
