  • 12 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  • Boil water in a large pot. Add a pinch of salt, then cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  • While the pasta cooks, prepare your veggies. Chop the cherry tomatoes, cucumber, bell pepper, and red onion. Set them aside.
  • Once the pasta is done, drain it and rinse under cold water to cool it down. This also helps stop the cooking process.
  • In a large bowl, combine the cooled pasta, chopped vegetables, olives, feta cheese, and parsley.
  • In a separate bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  • Pour the dressing over the salad and mix well to combine all the flavors.
  • Taste and adjust seasoning if necessary. Serve immediately, or refrigerate for at least 30 minutes to let the flavors meld.
