- 2 pounds Yukon Gold potatoes (peeled and quartered)
- 1/4 cup olive oil
- 1/3 cup fresh lemon juice
- 3 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Mix well.
- Add the potatoes to the dish, tossing them until they're well coated with the lemon mixture.
- Pour the chicken broth around the potatoes.
- Bake in the preheated oven for 45 minutes, stirring halfway through.
- Increase the oven temperature to 425°F (220°C) and bake for an additional 15 minutes, or until the potatoes are golden and crispy.
