  • 200g (7 oz) pitted dates, chopped
  • 250ml (1 cup) boiling water
  • 100g (1/2 cup) unsalted butter, softened
  • 150g (3/4 cup) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 200g (1 1/2 cups) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda

For the toffee sauce, you will need:

  • 200g (1 cup) brown sugar
  • 100g (1/2 cup) unsalted butter
  • 250ml (1 cup) heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Soak chopped dates in boiling water for 15 minutes.
  2. Cream softened butter and brown sugar until fluffy, then add eggs and vanilla.
  3. Mix flour, baking powder, and baking soda in a separate bowl, then combine with the butter mixture and soaked dates.
  4. Preheat oven to 180°C (350°F), then bake batter in a greased dish for 30 minutes.
  5. Make toffee sauce by heating brown sugar, butter, and cream until thickened.
  6. Serve pudding warm with toffee sauce and optional ice cream.
