  • Total Time: 1 hour 40 minutes
  • Yield: 12 muffins

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • ¾ teaspoon salt
  • 1 cup warm water (about 110°F)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 3 cloves garlic, minced
  • Optional: sea salt for topping

Instructions

  1. Activate the yeast by mixing warm water, sugar, and yeast; let it sit until frothy.
  2. In a bowl, whisk together flour and salt.
  3. Combine the frothy yeast mixture with the flour, olive oil, rosemary, and garlic; stir to form a dough.
  4. Knead the dough on a floured surface until smooth and elastic.
  5. Let the dough rise in a greased bowl for about 1 hour, covered with a towel.
  6. Punch down the dough, divide it into 12 pieces, and shape into balls.
  7. Place the balls in a greased muffin tin and let rise for 30 minutes.
  8. Preheat the oven to 375°F (190°C).
  9. Sprinkle sea salt on top of the muffins and bake for 20-25 minutes until golden brown.
  10. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

  • For a stronger flavor, use fresh rosemary instead of dried.
