  • 1 package (9 oz) refrigerated cheese tortellini
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 2 cups fresh spinach (optional)
  • Fresh parsley, for garnish

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Stir in the tortellini and cook according to package instructions (about 3-5 minutes). You want them tender but not mushy.
  • Pour in the heavy cream and bring it to a simmer. Let it cook for about 2-3 minutes until it thickens slightly.
  • Add the grated Parmesan cheese and Italian seasoning. Stir until the cheese melts and creates a creamy sauce.
  • If using spinach, toss it in at this point, allowing it to wilt for a minute.
  • Season with salt and pepper to taste. Serve warm, garnished with fresh parsley.
