- 4 boneless, skinless chicken breasts
- 4 medium-sized potatoes, diced
- 1/2 cup grated parmesan cheese
- 4 cloves of garlic, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Season chicken breasts with salt, pepper, and oregano.
- Mix minced garlic with olive oil.
- Toss diced potatoes with half of the garlic-oil mixture and spread on a baking sheet.
- Place chicken on top of potatoes, drizzle with remaining garlic-oil mixture, and sprinkle with parmesan cheese.
- Bake for about 45 minutes until chicken is cooked and potatoes are golden brown.
Notes
- For added flavor, let the chicken marinate for a few hours before baking.
- Garnish with fresh parsley before serving.
