- 8 ounces pasta (penne or fusilli)
- 2 cups sliced mushrooms
- 3 cloves garlic, minced
- 1 cup Swiss cheese, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Start by cooking the pasta according to package instructions. Drain and set aside, reserving a bit of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they’re browned and tender.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the cooked pasta to the skillet. Toss everything together, adding a splash of reserved pasta water if needed to loosen the mixture.
- Sprinkle in the shredded Swiss cheese and mix until melted and gooey. Season with salt and pepper to taste.
- Transfer the pasta melt to a serving dish and garnish with fresh parsley if desired. Serve hot and enjoy!
