- 1 pound large shrimp, peeled and deveined
- 4 ears of corn, husked and cut into thirds
- 1/4 cup olive oil
- 5 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: red pepper flakes for a spicy kick
Instructions
- Prepare ingredients: peel and devein shrimp, cut corn into thirds.
- Boil water, add corn, and cook for 5-7 minutes until tender; set aside.
- In the same pot, heat olive oil and sauté garlic for 1 minute.
- Add shrimp, seasoning with salt, pepper, and paprika; cook for 3-5 minutes until pink.
- Return corn to pot, add lemon juice and parsley, and toss to mix.
- Serve hot, garnished with extra parsley if desired.
Notes
- Adjust seasoning to taste.
- For extra spice, add red pepper flakes.
