- 1 lb sirloin steak, cut into bite-sized pieces
- 2 cups baby potatoes, halved
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C). This ensures your potatoes roast nicely.
- In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer and roast for about 20 minutes.
- While the potatoes roast, heat a skillet over medium-high heat. Add 2 tablespoons of butter.
- Once the butter is melted and bubbling, add the steak bites. Sear them for about 2-3 minutes on each side until they’re browned and cooked to your desired doneness.
- Add the minced garlic and thyme to the skillet, cooking for an additional minute until fragrant. Combine everything well.
- Once the potatoes are tender and golden, remove them from the oven. Add the remaining butter to the skillet with the steak, stirring to combine.
- Serve the steak bites alongside the roasted potatoes, garnishing with fresh parsley if desired.
