- 2 whole ripe avocados
- 1 lb medium shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon paprika

- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Melt the butter over medium heat in a large skillet. Add minced garlic and sauté for about 1 minute.
- Add the shrimp to the skillet and season with paprika, salt, and pepper. Cook until the shrimp turn pink, about 3-4 minutes.
- Squeeze in the lemon juice and stir to combine.
- Slice the avocados in half and remove the pits. Scoop out some flesh to create a larger cavity.
- Fill each avocado half with the garlic butter shrimp mixture, mounding it high.
- Garnish with fresh parsley and serve immediately.
