  • 2 whole ripe avocados
  • 1 lb medium shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon paprika

  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Melt the butter over medium heat in a large skillet. Add minced garlic and sauté for about 1 minute.
  • Add the shrimp to the skillet and season with paprika, salt, and pepper. Cook until the shrimp turn pink, about 3-4 minutes.
  • Squeeze in the lemon juice and stir to combine.
  • Slice the avocados in half and remove the pits. Scoop out some flesh to create a larger cavity.
  • Fill each avocado half with the garlic butter shrimp mixture, mounding it high.
  • Garnish with fresh parsley and serve immediately.
