  • 4 cloves garlic (minced)
  • 1/4 cup unsalted butter
  • 2 cups cooked rice (white or brown)
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 tablespoon fresh parsley (chopped, for garnish)
  • 1 teaspoon lemon juice (optional)

Instructions

  • Start by cooking your rice according to package instructions. Set aside once done.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the shrimp to the skillet. Season with salt and pepper. Cook for about 2-3 minutes on each side, or until they turn pink and opaque.
  • Reduce the heat to low and add the butter. Stir until melted, coating the shrimp in the garlic butter sauce.
  • Stir in lemon juice if using, then remove the skillet from heat.
  • To serve, place a generous scoop of rice in bowls and top with the garlic butter shrimp. Sprinkle with parsley for garnish.
