- 4 medium potatoes (Yukon Gold or Russet work well)
- 1/2 cup unsalted butter (melted)
- 4-5 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley (chopped (for garnish))
- optional Parmesan cheese (for topping)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the potatoes thoroughly. Place each potato between two wooden spoons, which helps you cut them without slicing all the way through.
- Make several evenly spaced cuts across each potato, about 1/4 inch apart. Be careful not to cut all the way through!
- In a bowl, combine melted butter, minced garlic, salt, and pepper.
- Brush the garlic butter mixture generously over the potatoes, making sure to get it between the slices.
- Place the potatoes on a baking sheet lined with parchment paper.
- Bake for 45-50 minutes, or until the potatoes are golden brown and crispy on the edges. You'll know they're ready when they're fork-tender.
- Remove from the oven and sprinkle with fresh parsley and optional Parmesan cheese before serving.
