  • 1/2 cup unsalted butter (melted)
  • 4-5 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley (chopped (for garnish))
  • optional Parmesan cheese (for topping)

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and dry the potatoes thoroughly. Place each potato between two wooden spoons, which helps you cut them without slicing all the way through.
  • Make several evenly spaced cuts across each potato, about 1/4 inch apart. Be careful not to cut all the way through!
  • In a bowl, combine melted butter, minced garlic, salt, and pepper.
  • Brush the garlic butter mixture generously over the potatoes, making sure to get it between the slices.
  • Place the potatoes on a baking sheet lined with parchment paper.
  • Bake for 45-50 minutes, or until the potatoes are golden brown and crispy on the edges. You'll know they're ready when they're fork-tender.
