- 1 pound boneless chicken breasts (cut into bite-sized pieces)
- 2 tablespoons butter
- 4 cloves garlic (minced)
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 teaspoon onion powder
- 1 teaspoon dried parsley (or fresh, if you have it!)
- Salt and pepper (to taste)
- 1 cup mixed vegetables (optional (like peas and carrots))
Instructions
- In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chicken pieces, seasoning them with salt, pepper, and onion powder. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Stir in the rice, making sure to coat it in the butter and garlic mixture.
- Pour in the chicken broth and add the dried parsley. Bring to a simmer.
- Cover the skillet and reduce the heat to low. Let it simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
- If you're adding vegetables, mix them in during the last 5 minutes of cooking.
- Fluff the rice with a fork before serving. Enjoy!
