  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 cups orzo pasta
  • 4 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper (to taste)
  • Fresh parsley chopped (for garnish)
  • 1 cup grated Parmesan cheese (optional)

Instructions

  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  • Once the chicken is cooked, add the minced garlic and thyme to the skillet. Sauté for about 1 minute until fragrant.
  • Pour in the chicken broth and bring it to a simmer. Then stir in the orzo. Cover the skillet and cook for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
  • Remove the skillet from the heat and stir in the remaining 2 tablespoons of butter and Parmesan cheese if using. Mix until creamy. Adjust seasoning if necessary.
  • Garnish with fresh parsley before serving. Enjoy your meal!
