  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1/4 cup chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 1 lemon (zest of)
  • 1/2 lemon lemon juice

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, mix ground chicken, breadcrumbs, Parmesan, garlic, parsley, salt, and pepper until well combined.
  • Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  • Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides, then transfer them back to the baking sheet.
  • Bake in the oven for 15-20 minutes, or until cooked through.
  • In the same skillet, melt butter over low heat. Add lemon zest and juice, stirring to combine.
  • Return the meatballs to the skillet, coating them with the garlic butter sauce.
  • Serve warm, garnished with additional parsley if desired.
