- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1/4 cup chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1 lemon (zest of)
- 1/2 lemon lemon juice
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, mix ground chicken, breadcrumbs, Parmesan, garlic, parsley, salt, and pepper until well combined.
- Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides, then transfer them back to the baking sheet.
- Bake in the oven for 15-20 minutes, or until cooked through.
- In the same skillet, melt butter over low heat. Add lemon zest and juice, stirring to combine.
- Return the meatballs to the skillet, coating them with the garlic butter sauce.
- Serve warm, garnished with additional parsley if desired.
