- 1 pound ground beef
- 1 small head green cabbage, chopped
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (15 oz) black beans, rinsed and drained
- 1 packet ranch dressing mix
- 1 cup shredded cheddar cheese
- 2 cups Fritos corn chips
- 1 tablespoon olive oil
- Optional toppings: sour cream, chopped green onions, jalapeños
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon (about 5-7 minutes).
- Drain any excess fat, then stir in the diced tomatoes and black beans. Sprinkle the ranch dressing mix over the top and mix well.
- Add the chopped cabbage to the skillet, stirring to combine. Cook for about 5 minutes until the cabbage starts to wilt.
- Transfer the mixture to a greased 9×13-inch baking dish. Top with shredded cheddar cheese.
- Bake in the preheated oven for 25 minutes until the cheese is bubbly and golden.
- Remove from the oven and sprinkle Fritos on top. Bake for an additional 5 minutes.
- Let it cool for a few minutes before serving. Top with optional sour cream, green onions, or jalapeños if desired.
