A delightful casserole combining crunchy Fritos, savory ground beef, and fresh cabbage.

  • 1 pound ground beef
  • 1 small head green cabbage, chopped
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 packet ranch dressing mix
  • 1 cup shredded cheddar cheese
  • 2 cups Fritos corn chips
  • 1 tablespoon olive oil
  • Optional toppings: sour cream, chopped green onions, jalapeños

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon (about 5-7 minutes).
  • Drain any excess fat, then stir in the diced tomatoes and black beans. Sprinkle the ranch dressing mix over the top and mix well.
  • Add the chopped cabbage to the skillet, stirring to combine. Cook for about 5 minutes until the cabbage starts to wilt.
  • Transfer the mixture to a greased 9×13-inch baking dish. Top with shredded cheddar cheese.
  • Bake in the preheated oven for 25 minutes until the cheese is bubbly and golden.
  • Remove from the oven and sprinkle Fritos on top. Bake for an additional 5 minutes.
  • Let it cool for a few minutes before serving. Top with optional sour cream, green onions, or jalapeños if desired.
