To make this delicious Frito Cowboy Cabbage Recipe, you’ll need the following ingredients:
- 1 medium head of green cabbage, chopped
- 1 pound ground beef or turkey
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 bag Fritos corn chips
- Optional: chopped cilantro and sour cream for serving
Instructions
- Brown the ground beef or turkey in a large skillet over medium heat for 5-7 minutes.
- Add chopped cabbage and cook until it wilts, about 5 minutes.
- Stir in black beans, corn, and taco seasoning; cook for a couple of minutes.
- Mix in salsa and sprinkle 1 cup of cheese on top; cover and simmer for 10 minutes.
- Serve on a bed of Fritos, topped with remaining cheese, cilantro, and sour cream if desired.
