Instructions
- Grate the zucchinis and place in a bowl.
- Squeeze out excess water using a cheesecloth or towel.
- Mix the squeezed zucchini with breadcrumbs, Parmesan, eggs, parsley, garlic powder, salt, and pepper.
- Heat oil in a skillet over medium heat.
- Form small patties with the mixture and fry for 3-4 minutes on each side until golden brown.
- Drain on paper towels and serve warm.
