- 1 lb flank steak
- 1/4 cup olive oil
- 1/4 cup lime juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 avocado, diced
- 1/2 cup diced tomatoes
- 1/4 cup crumbled feta cheese (optional)
- Lime wedges, for serving
Instructions
- In a bowl, whisk together olive oil, lime juice, chopped cilantro, garlic, cumin, chili powder, salt, and pepper. Add the flank steak and coat it well. Let it marinate for at least 30 minutes, or up to 4 hours for more flavor.
- Preheat your grill or skillet over medium-high heat. Remove the steak from the marinade and cook it for about 5-6 minutes on each side for medium-rare. Adjust the cooking time based on your preference.
- Once cooked, let the steak rest for about 5-10 minutes to allow the juices to redistribute. This will keep it tender and juicy.
- Thinly slice the steak against the grain. This ensures each bite is tender and flavorful.
- In a bowl, start with a base of rice, then layer on the sliced steak, black beans, corn, diced tomatoes, and avocado. Top with crumbled feta cheese if you like.
- Drizzle with extra lime juice and sprinkle with fresh cilantro. Serve with lime wedges on the side.
