- 2 cups cooked chicken (shredded or diced)
- 1 cup diced apples (Granny Smith recommended for tartness)
- 1/2 cup dried cranberries
- 1/2 cup chopped celery
- 1/4 cup chopped walnuts (optional)
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- to taste salt and pepper
Instructions
- Gather all your ingredients.
- In a large bowl, combine the cooked chicken, diced apples, cranberries, celery, and walnuts.
- In a separate bowl, whisk together the Greek yogurt, honey, lemon juice, salt, and pepper.
- Pour the dressing over the salad mixture and gently toss to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
