  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups peeled and diced fresh apples (about 3 large apples)
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Whisk together flour, baking soda, salt, and cinnamon in a large bowl.
  3. In another bowl, beat granulated sugar, brown sugar, and vegetable oil; add eggs one at a time.
  4. Gradually mix dry ingredients into the wet ingredients until just combined.
