Instructions
- Heat olive oil and butter in a skillet over medium heat, add onions, and cook for 15-20 minutes until caramelized.
- Prepare chicken by creating pockets and seasoning with garlic powder, salt, and pepper.
- Stuff chicken pockets with the caramelized onions and top with Gruyère cheese.
- Preheat oven to 375°F (190°C). Sear stuffed chicken in the skillet for 3-4 minutes per side, then bake for 25-30 minutes.
- Let chicken rest before serving, garnished with thyme if desired.
