- 1 pound of sausage meat
- 2 large onions, thinly sliced
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- ½ teaspoon of black pepper
- 1 teaspoon of thyme (fresh or dried)
- 1 cup of shredded cheese (Gruyère or mozzarella work wonders)
- 1 package of puff pastry (thawed)
- 1 egg (beaten, for egg wash)
Instructions
- Caramelize the onions in olive oil with salt for 15-20 minutes until golden brown.
- Mix sausage meat, cooked onions, black pepper, thyme, and half of the cheese in a bowl.
- Roll out the thawed puff pastry to ¼ inch thick and cut into rectangles (4×6 inches).
- Place sausage mixture on one end of each rectangle, sprinkle with cheese, roll tightly, and seal edges.
- Brush the tops with beaten egg and place on a baking sheet lined with parchment paper.
- Bake at 400°F (200°C) for 25-30 minutes until golden brown.

- Ensure the onions are well caramelized for maximum flavor.
