  • 4 pieces boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 4 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 cup beef broth
  • 1 cup shredded Swiss cheese

  • optional Fresh parsley for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until they are golden brown, about 15-20 minutes, stirring occasionally.
  • While the onions are cooking, season the chicken breasts with garlic powder, thyme, salt, and pepper.
  • Once the onions are caramelized, pour in the beef broth and let it simmer for an additional 5 minutes.
  • Place the seasoned chicken breasts in a baking dish and pour the onion mixture over them, making sure the chicken is well coated.
  • Cover the dish with aluminum foil and bake for 25 minutes.
  • Remove the foil, sprinkle the shredded cheese over the chicken, and return to the oven for another 10-15 minutes until the cheese is bubbly and golden.
  • Garnish with fresh parsley, if desired, and serve hot.
