- 2 cups shredded zucchini (about 1 medium zucchini)
- 1 cup almond butter (or peanut butter)
- 1/2 cup cocoa powder
- 1/2 cup honey (or maple syrup)
- 2 large eggs (or flax eggs for a vegan option)
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional, but highly recommended!)

- In a large bowl, combine the shredded zucchini, almond butter, cocoa powder, honey, eggs, vanilla extract, baking soda, and salt. Mix until well combined.
- If you’re using chocolate chips, fold them into the batter now.
- Pour the mixture into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the brownies cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely before slicing.
