Delicious, fudgy brownies made without flour, packed with hidden zucchini goodness!

  • 2 cups shredded zucchini (about 1 medium zucchini)
  • 1 cup almond butter (or peanut butter)
  • 1/2 cup cocoa powder
  • 1/2 cup honey (or maple syrup)
  • 2 large eggs (or flax eggs for a vegan option)
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional, but highly recommended!)

Instructions

  • Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  • In a large bowl, combine the shredded zucchini, almond butter, cocoa powder, honey, eggs, vanilla extract, baking soda, and salt. Mix until well combined.
  • If you’re using chocolate chips, fold them into the batter now.
  • Pour the mixture into the prepared baking pan and spread it evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the brownies cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely before slicing.
